Ingredients

Lemon Loaf:

  • 1 cup granulated sugar
  • 1 Tablespoon lemon zest
  • 3 large eggs room temperature
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 Tablespoons fresh lemon juice
  • 3/4 cup full-fat Greek yogurt

Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 Tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Butter a 9×5 loaf pan, and set aside.

  • In a bowl, gently massage the granulated sugar with lemon zest to infuse the sugar with the citrus aroma.
